Avocado Toast with Schmacon
One of my favorite things about writing my food blog is getting to share recipes with the world. Since I do eat out a lot, I find myself posting a lot of healthier recipes like this acorn squash recipe to balance out the frequent restaurant visits. BUT, there are definitely times I like to experiment with more indulgent foods, especially bacon! I recently discovered the amazingness that is Schmacon. Schmacon is smoked, uniquely seasoned and sweet, crispy beef product that tastes like a combination of your favorite pastrami from the deli with the crispiness of bacon. Schmacon is made with whole-muscle beef and has less calories, fat and sodium than regular bacon.
Schmacon sent me a whole pack to experiment with and Iโve used it on grilled cheese, breakfast sandwiches, and crumbled in tacos. My favorite recipe thus far though has been egg-in-the-hole avocado toast topped with Schmacon.
Ingredients:
- Half an Avocado
- 2 strips of Schmacon
- 1 egg
- 1 large piece of sourdough bread
- Salt, pepper, garlic powder to taste
- 1 tablespoon sweet chili sauce (I love Trader Joes)
- Olive oil cooking spray
Directions:
- Smash up avocado and season with salt, pepper, and garlic powder and set aside
- Cut out a circular hole in the piece of sourdough and spray each side with olive oil cooking spray
- Heat a skillet large enough for bread to low-medium heat
- Place bread in skillet and crack an egg into the circular cut-out in the piece of bread
- Cook for 2-3 minutes until yolk starts to go from clear to white
- With a spatula flip the toast to the other side and cook for another 2-3 minutes
- Transfer toast to a plate and top one side with avocado mash, sweet chili sauce and Schmacon
